Recipe — Maple summer in Normandy

Ingredients

  • 2 oz Calvados (or apple brandy)
  • 1 tablespoon maple syrup (preferably amber syrup for its rich flavour)
  • 1 tablespoon freshly squeezed lemon juice
  • 2 dashes of lemon bitters (or other bitters, to taste)
  • A few ice cubes
  • 1/2 oz dry sparkling cider

Method

  1. Add all ingredients except cider to a shaker and shake well.
  2. Strain into a coupette and top off with sparkling cider.

Maple syrup comes in four classifications, according to colour and taste.
