Refreshing and Natural
The maple tree owes its life, growth, and self-preservation to its sap, the maple water that flows within, carrying 46 essential nutrients to every extremity. Even better for humans, it contains only 9 g of carbohydrates and 35 calories per 375ml serving!
It’s such a pleasure to drink, too. Sweet and delicate, cold maple water tastes so good. You can cook with maple water as well: mix it in, simmer or poach in it, soak or flavour with it! Chefs and bakers love its fine palate, subtle aroma, and light sweetness.
Maple water is a delightful beverage but it also has numerous gastronomic applications in dishes that are salty, sweet, or sour. It may be used to cook a ham by immersion, braise meats and poultry, blanch vegetables, and deglaze a pan. Maple water is ideal for poaching fish and seafood as it is said to create an osmosis that concentrates flavours in a way that approaches the fifth basic taste, umami.
Some of Maple Water’s Other Culinary Applications :
• Bitter green soups and potages
• Poaching and stewing poultry
• Meat marinades (game, flank steak, pork)
• Beurre blanc and emulsion (béarnaise) sauces
• Étouffée of pork, lamb, beef, pork
• Pastry creams
• Moistening cake
• Ice cream and sorbets
• Plain or fruit mousse
• Ice cubes for cocktails
Maple Water from Québec has its own standards certification. NAPSI was implemented by the maple producers’ association, the Quebec Maple Syrup Producers, to ensure their product’s authenticity and quality. When they see this seal, consumers know they will be drinking fresh, crystal-clear maple water, the very same sap that flows through the tree. NAPSI is an acronym that captures the best qualities for which Maple Water from Québec is known:
- Authentic, the way Nature provides it from the tree
- Pure, with no added agents or ingredients
- Sterile, devoid of all microorganisms
- Integral, as it is whole and unrefined
