Maple Gravy

Ingredients
- 1/2 cup maple syrup (preferably amber syrup for its rich flavour)
- 1 carrot, peeled and chopped
- 1 onion, chopped
- 1 clove garlic, chopped
- 1 c. à soupe vegetable oil
- 1 - 284 ml (10 oz) container beef stock
- 1 - 284 ml (10 oz) container chicken stock
- 2 tbsp cornstarch
- 1/4 cup cold water
Method
- Put a saucepan over medium-high heat and sauté the carrot, onion, and garlic in the oil, stirring, for 5 minutes or until golden. Add the stock. Bring to the boil.
- Meanwhile, dilute the cornstarch in the cold water. Whisk into the stock and simmer for 3 – 5 minutes or until thickened.
- Season with salt and pepper. Pass through a sieve.
YIELD: 1 Litre
SERVING SUGGESTIONS: Goes well with spiced roast chicken, turkey, red meat, even baked salmon.
