Ingredients

  • 1/2 cup maple syrup (preferably amber syrup for its rich flavour)
  • 1 carrot, peeled and chopped
  • 1 onion, chopped
  • 1 clove garlic, chopped
  • 1 c. à soupe vegetable oil
  • 1 - 284 ml (10 oz) container beef stock
  • 1 - 284 ml (10 oz) container chicken stock
  • 2 tbsp cornstarch
  • 1/4 cup cold water

Method

  1. Put a saucepan over medium-high heat and sauté the carrot, onion, and garlic in the oil, stirring, for 5 minutes or until golden. Add the stock. Bring to the boil.
  2. Meanwhile, dilute the cornstarch in the cold water. Whisk into the stock and simmer for 3 – 5 minutes or until thickened.
  3. Season with salt and pepper. Pass through a sieve.

YIELD: 1 Litre

SERVING SUGGESTIONS: Goes well with spiced roast chicken, turkey, red meat, even baked salmon.
