Maple Strawberry-Top Cocktail

Maple and strawberry tops syrup
- 2 cups strawberry tops, washed well
- 1 cup maple syrup (preferably golden syrup for its delicate flavour)
Cocktail
- 1 oz maple and strawberry tops syrup, or to taste
- Sparkling wine or sparkling cider, as needed
- 1 strawberry for garnish
Method
Maple and strawberry tops syrup
- Combine ingredients in a bowl, cover and let stand in refrigerator for 2 days.
- Pass through a fine sieve or cheesecloth.
- Keep resulting syrup in the refrigerator.
Cocktail
- Pour sparkling wine into a champagne flute.
- Carefully add the syrup by pouring it over the back of a teaspoon.
- Garnish with a strawberry and serve.
Note: The maple and strawberry top syrup is perfect for flavouring cocktails or as a topping for yogurt, ice cream and pastries.
