Hint-of-Maple Sandwich Loaf

  • 4 large slices of white or whole wheat bread, crustless (tramezzini-style), sliced lengthwise*
  • 1/3 cup butter, softened


  • 1 1/2 cup cooked chicken, cut into pieces
  • 3 tbsp plain Greek yogourt
  • 2 tbsp mayonnaise
  • 2 tbsp pesto
  • 1/2 tbsp maple syrup (preferably golden syrup for its delicate flavour)


  • 1 1/2 cup cooked ham, Black Forest or old-fashioned
  • 3 tbsp plain Greek yogourt
  • 1 tbsp mayonnaise
  • 1 tbsp Dijon mustard
  • 2 tbsp pickles, chopped
  • 1/2 tbsp maple syrup (preferably golden syrup for its delicate flavour)
  • Pepper, to taste


  • 1 2/3 cup extra-firm tofu, blotted dry and crumbled
  • 1/4 cup plain Greek yogourt
  • 3 tbsp mayonnaise
  • 2 tbsp chives, minced
  • 1 tbsp Dijon mustard
  • 1/2 tbsp maple syrup (preferably golden syrup for its delicate flavour)
  • 1/2 tsp ground turmeric
  • Pepper, to taste


  • 1/2 brick cream cheese, softened
  • 1/2 log creamy goat cheese, softened
  • 1/2 tbsp maple syrup (preferably golden syrup for its delicate flavour)
  • 1 tbsp hot water
  • Your choice of garnishes: parsley or mesclun, thin slices of radish, shoots of radish or other vegetables, spirals of beet or carrot, cherry tomatoes, rosettes of smoked salmon.


  1. Prepare the three first fillings. For the chicken and ham, blend all ingredients in a food processor for a few seconds (more or less, depending on desired texture). You can do the tofu in the food processor or simply crumble it by hand and use a spoon to mix with the other ingredients. Set fillings aside.
  2. Mix all cheese topping ingredients with a spoon until smooth. Set aside.
  3. Butter all 4 slices of bread on one side.
  4. Assembly: Place first slice of bread (butter side up) on a serving plate and spread the chicken filling evenly all over it. Place second slice of bread on top and spread with ham filling. Position third slice of bread and spread with tofu filling. Cover with fourth slice of bread and spread with cheese topping.
  5. Garnish as desired.
  6. Refrigerate until time to serve.


* Instead of tramezzini-style bread, you can use 8 slices of square (sandwich) bread with the crusts removed. Use two slices per layer.
