Ingredients

Maple and strawberry tops syrup

  • 2 cups strawberry tops, washed well
  • 1 cup maple syrup (preferably golden syrup for its delicate flavour)

Cocktail

  • 1 oz maple and strawberry tops syrup, or to taste
  • Sparkling wine or sparkling cider, as needed
  • 1 strawberry for garnish

Method

Maple and strawberry tops syrup

  1. Combine ingredients in a bowl, cover and let stand in refrigerator for 2 days.
  2. Pass through a fine sieve or cheesecloth.
  3. Keep resulting syrup in the refrigerator.

Cocktail

  1. Pour sparkling wine into a champagne flute.
  2. Carefully add the syrup by pouring it over the back of a teaspoon.
  3. Garnish with a strawberry and serve.

Note: The maple and strawberry top syrup is perfect for flavouring cocktails or as a topping for yogurt, ice cream and pastries.
