Maple TVP Tacos

Ingredients
- 8 medium (or 12 small) flour tortillas
FILLING
- 1 onion, chopped
- 1 tbsp canola oil
- 1 clove garlic, chopped
- 1 tbsp ground cumin
- 1 tbsp chili powder
- 1/2 cup water
- 1 cup crushed tomatoes
- 3 tbsp maple syrup, preferably amber syrup for its rich flavour
- Zest and juice of 1 lime
- 1 cup textured vegetable protein (TVP) in fine granules
Method
- In a small saucepan over medium heat, sauté the onion in oil for 2 minutes. Add the garlic, cumin, and chili powder and cook for another minute before adding the water, crushed tomatoes, maple syrup, and lime zest and juice. Reduce heat to low and simmer with the lid slightly ajar for 8 – 10 minutes.
- Stir in the TVP granules. Cover, remove from heat, and let stand for 5 minutes.
ASSEMBLE
- Fill your warm tortillas with the TVP mixture and garnish as desired: diced tomatoes, avocado, cilantro, grated cheese, plain yogurt, sour cream, etc.
RESTING TIME: 5 minutes
KEEPS FOR: 5 days in the fridge or 3 months in the freezer.
