Maple Bagel Bites

Ingredients

  • 1/2 cup whole wheat flour
  • 1/2 cup all purpose flour
  • 1/4 cup maple sugar
  • 2 tsp baking powder
  • 1 cup plain Greek yogurt or cottage cheese, puréed
  • 6 cups water
  • 1/4 cup maple syrup, preferably dark syrup for its robust flavour
  • 1/2 cup sesame seeds

Method

  1. Preheat oven to 190° C (375° F) with the rack in the centre position.
  2. In a medium bowl, blend the flours, maple sugar, baking powder, and the yogurt (or cottage cheese).
  3. Place mixture on a floured work surface and shape into a cylinder or slightly flattened ball. Cut into 4, then those quarters each into 4, to make 16 pieces. Roll into 16 balls. Set aside.
  4. Pour the water and maple syrup into a medium saucepan and bring to temperature over medium-high heat. Reduce to a simmer over medium-low heat and add half the dough balls. Cook for 1 minute, then turn them and cook for another minute. Use a slotted spoon to remove them and put the remaining dough balls in the water, cooking them for a minute on each side.
  5. Put the sesame seeds in a bowl, then roll each dough ball in them to coat.
  6. Line a baking sheet with a reusable mat or parchment paper. Arrange the balls on the tray and bake for 22 – 25 minutes, until lightly golden. Allow to cool slightly before serving your bagel bites.

YIELD: 16 bites

KEEPS FOR: 3 days in an airtight container at room temperature or 3 months in the freezer.
