Ingredients

  • About 4 lb chuck roast, bone-in if possible (for added flavour)
  • 4 cups beef broth
  • 2 cups red wine
  • 1 cup maple syrup (preferably dark syrup for its robust flavour)
  • 4 tbsp Dijon mustard
  • 2 bay leaves
  • 2 stems rosemary and 2 stems thyme, tied together
  • 1 whole onion, studded with 2 cloves
  • 4 tbsp cornstarch, diluted in a little cold water
  • Salt and pepper to taste

Method

  1. Preheat oven to 160° C (325° F) or set the slow cooker to low.
  2. Put the meat into a roasting pan (or the slow cooker), then add the broth, wine, maple syrup, mustard, bay leaves, bunch of herbs, and onion.
  3. Cover and roast in the oven or slow cooker for 3 – 4 hours or until the meat comes apart easily.
  4. Remove the onion and herbs.
  5. Add the diluted cornstarch, stir gently with the broth, and cook uncovered for 1 more hour.

SERVING SUGGESTION: Serve with your choice of vegetables and potatoes.
