Maple Cotton Eyed Joe

Preparation Time:

  • 3 slices of ginger
  • 1/4 oz maple syrup (preferably dark syrup for its robust flavour)
  • 1 1/2 oz gin
  • 1/4 oz ice cider
  • 3/4 oz lemon juice
  • Ice cubes
  • Maple cotton candy (to garnish)


  1. In a cocktail shaker, mash ginger into the maple syrup.
  2. Add all other ingredients, add ice cubes, and shake.
  3. Strain through fine sieve into an Old-Fashioned glass with an ice cube in it.
  4. Garnish with maple cotton candy.

Maple syrup comes in four classifications, according to colour and taste.

At the start of sugaring season, syrup is generally clear, with a lightly sweet taste. It becomes darker and caramelized as the season goes on.
