Maple Mojito

Ingredients

  • 8 mint leaves
  • 1 1/2 oz white or dark Acerum
  • 1 tbsp maple syrup (preferably amber syrup for its rich flavour)
  • 2/3 oz fresh lime juice
  • 2 oz sparkling water
  • 1 sprig fresh mint and 1 slice of lime (to garnish)

Method

  1. Squeeze the mint leaves in the palm of your hand, then drop them into a glass.
  2. Add the Acerum, maple syrup, and lime juice.
  3. Fill a highball glass with ice cubes and stir with a spoon until the glass feels freezing to your fingers.
  4. Top up with the sparkling water.
  5. Garnish with the mint and lime.
