Ingredients

  • 1/2 oz maple syrup (preferably amber syrup for its rich flavour)
  • 4 slices fresh ginger
  • 1 1/2 oz vodka
  • 3/4 oz fresh lime juice
  • 2 oz sparkling maple cider or sparkling maple wine
  • 1 Stem of fresh rosemary and ultrafine maple sugar (to decorate)

Method

  1. Choose either a 350 ml (12 oz) highball glass or a 420 ml (14 oz) copper mug, pour in the maple syrup, and muddle the ginger in it.
  2. Add the vodka and fresh lime juice.
  3. Fill with ice cubes and stir with a spoon until the glass is freezing to your fingers.
  4. Top up with the sparkling maple cider or sparkling maple wine.
  5. Garnish with the stem of rosemary dusted with maple sugar.

Maple syrup comes in four classifications, according to colour and taste.

At the start of sugaring season, syrup is generally clear, with a lightly sweet taste. It becomes darker and caramelized as the season goes on.

An unopened can of maple syrup keeps for many years.

Once the can is opened, syrup should be kept in an airtight container in a cool place.
