Ingredients

  • 4 lime wedges
  • 2 oz white cachaça*
  • 0.5 oz maple syrup (preferably golden, for its delicate flavour)
  • Maple candy, to garnish

Method

  1. Muddle the lime wedges in an Old Fashioned glass.
  2. Add ice cubes and mix in the ingredients (except the maple candy) with a bar spoon.
  3. Garnish with a maple candy.

*If using an aged cachaça, go with amber maple syrup for its rich flavour.

Maple syrup comes in four classifications, according to colour and taste.

At the start of sugaring season, syrup is generally clear, with a lightly sweet taste. It becomes darker and caramelized as the season goes on.

An unopened can of maple syrup keeps for many years.

Once the can is opened, syrup should be kept in an airtight container in a cool place.
