Ingredients

  • 6 tbsp maple syrup (preferably amber syrup, for its rich flavour)
  • 1/4 cup sliced almonds
  • 1 1/4 cup vanilla ice cream
  • 6 tbsp espresso (or strong coffee)
  • Maple syrup (preferably amber syrup, for its rich flavour), to taste

Method

  1. Put the maple syrup in a pot and boil for about 5 minutes over low heat. When the maple syrup has thickened, add sliced almonds and mix vigorously.
  2. Pour the mixture onto a cookie sheet lined with parchment paper and quickly spread into a thin layer. Let sit for 30 minutes and break in pieces.
  3. Put vanilla ice cream in a bowl, maple sugar chunks and place on the ice cream. Pour hot espresso and maple syrup over the top.
