Recipe — Fruit Bake with Maple Syrup

Ingredients

  • 6 types of deseeded and cored fruit (apples, pears, peaches, bananas, etc.)
  • 2 tablespoons unsalted butter
  • 1/2 cup maple syrup (preferably dark syrup for its robust flavour)
  • 2 tablespoons lemon juice
  • 1/3 cup dry raisins, dried ranberries or apricots
  • 1/4 cup crushed nuts (walnuts, almonds, pecans, etc.)

Method

  1. Preheat the oven to 210 °C (425 °F).
  2. Halve the fruits – bananas should be halved lengthwise. Place into an oven-proof dish (peel down).
  3. In a pan, combine the butter, the maple syrup, the lemon juice, the dry fruits and the crushed nuts.
  4. Bring to a boil and simmer for 3 minutes. Pour the dry fruits and nuts mix over the fruits and bake in the oven for 15 minutes.
