Maple Apple Pie

Ingredients

Crust

  • 2/3 cup Graham cracker crumbs
  • 1/2 cup whole wheat flour
  • 1/2 cup ground almonds
  • 2 tablespoons maple syrup (preferably amber syrup for its rich flavour)
  • 2 tablespoons melted butter or margarine
  • 1 pinch of salt

Filling

  • 4 cups apples (Cortland, Empire, Lobo), peeled, cored and sliced
  • 1/2 cup plain yogurt
  • 1 cup maple syrup
  • 1/2 cup whole wheat flour
  • 1 egg

Topping

  • 1/4 cup maple nuggets
  • 1 tablespoon pine nuts
  • A little cinnamon

Method

  1. Preheat oven to 160°C (325°F).
  2. In a bowl, combine all crust ingredients and press down into bottom of a 23-cm (9-in) pie plate.
  3. Bake for 12 minutes. Remove from oven and raise temperature to 190°C (375°F).
  4. Combine filling ingredients in a bowl. Spread over bottom of crust.
  5. Sprinkle maple nuggets, pine nuts and cinnamon on top.
  6. Bake for 45 minutes.

You’ll find maple nuggets in health food and specialty grocery stores. Perhaps your favourite grocer will order them for you. You can also substitute with grated hard maple sugar.
