
Maple Beets

Ingredients
- 8 beets
- 4.5 oz fresh goat cheese
- 2 tablespoons maple syrup (preferably amber syrup for its rich flavour)
- 3 tablespoons cider vinegar
- 1/4 cup olive oil
- microgreens of your choice
Method
- Thinly slice the beets and arrange them on 4 plates.
- Crumble the fresh goat cheese over the beets, then drizzle with maple syrup, apple cider vinegar, and extra virgin olive oil.
- Season to taste, then pour over beets. Garnish with greens.
Optimize the flavour :
To seal in the flavour of your beets, wrap them individually in aluminum foil, unpeeled, then cook for two hours in an oven preheated to 180 °C (350 °F). Let cool before peeling them.
