Recipe — Maple-Flavoured Quinoa Salad with Feta and Mint

Ingredients

  • 2 cups quinoa, cooked
  • 1/2 cup fresh herbs, chopped
  • 1 cup feta, crumbled
  • 1 can of chickpeas, drained
  • 12 cherry tomatoes, split in half
  • 1 red onion, chopped
  • Maple syrup dressing
  • Salt and pepper, to taste

Method

  1. In a bowl combine all ingredients.
  2. Add dressing and season to taste.
  3. Serve chilled.
