Ingredients

  • 1 tablespoon olive oil
  • 1/4 cup breadcrumbs
  • 3 eggs
  • 1 cup milk
  • 1/4 cup maple syrup (preferably golden syrup for its delicate flavour)
  • 1 small carrot, grated
  • 1/2 zucchini, grated
  • 1/2 leek, sliced thin
  • 1/4 cup cheddar cheese, grated
  • Salt and pepper, to taste
  • 6 cherry tomatoes, halved

Method

  1. Preheat oven to 180 °C (350 °F).
  2. Oil a 25-cm (10-in) quiche pan and coat with breadcrumbs. Set aside.
  3. In a large bowl, beat together eggs, milk, maple syrup, carrot, zucchini and leek. Add cheese and season with salt and pepper.
  4. Pour mixture into quiche pan. Top with cherry tomatoes.
  5. Bake for about 45 minutes.
  6. Let stand for 10 minutes before serving. Serve with a green salad.
