Maple-Green Apple Rice

Ingredients

  • 1/4 cup extra virgin olive oil
  • 1 onions, finely chopped
  • 2 red peppers and/or yellow, diced
  • 1/2 cup maple syrup (preferably golden syrup for its delicate flavour)
  • 1 a bottle of local beer
  • 4 cups  vegetable stock
  • 2 cups long grain rice (rinse before cooking!)
  • Salt and pepper, to taste
  • 4 local apples
  • 1/2 tasse chopped coriander

Method

  1. In a large thick-bottomed casserole, heat oil on high. Add onion, pepper and maple syrup and sweat.
  2. Lower heat, deglaze casserole with beer, and then reduce until almost all liquid has evaporated.
  3. Add chicken stock and bring to a boil before adding rice. Season.
  4. Cover and cook for 20 minutes or until done.
  5. Add apples and serve. Add coriander.
