
Maple-Green Apple Rice

Ingredients
- 1/4 cup extra virgin olive oil
- 1 onions, finely chopped
- 2 red peppers and/or yellow, diced
- 1/2 cup maple syrup (preferably golden syrup for its delicate flavour)
- 1 a bottle of local beer
- 4 cups vegetable stock
- 2 cups long grain rice (rinse before cooking!)
- Salt and pepper, to taste
- 4 local apples
- 1/2 tasse chopped coriander
Method
- In a large thick-bottomed casserole, heat oil on high. Add onion, pepper and maple syrup and sweat.
- Lower heat, deglaze casserole with beer, and then reduce until almost all liquid has evaporated.
- Add chicken stock and bring to a boil before adding rice. Season.
- Cover and cook for 20 minutes or until done.
- Add apples and serve. Add coriander.
