Recipe — Maple Sundae
4 portions
Metric Imperial

Ingredients

  • 2 cups of maple syrup (preferably amber syrup for its rich flavour)
  • 4 servings of ice cream
  • 1 cup of fresh fruit of your choice (strawberries, raspberries, cantaloupe, peaches, pears, kiwis, bananas, etc.)

Method

  1. Pour the maple syrup into a large casserole. Bring to a boil over medium-high heat, keeping a close eye on it at all times.
  2. Let simmer until a drop of hot syrup crystallizes in a glass of very cold water. It must still be soft enough to be elastic.
  3. In a sundae glass, layer the maple syrup, ice cream and fruit. Enjoy!

More about Maple

Maple syrup comes in four classifications, according to colour and taste.

At the start of sugaring season, syrup is generally clear, with a lightly sweet taste. It becomes darker and caramelized as the season goes on.

An unopened can of maple syrup keeps for many years.

Once the can is opened, syrup should be kept in an airtight container in a cool place.

100% pure maple butter contains no butter or dairy.

Like all 100% pure maple products, maple butter comes from the sap of the maple tree… and that’s all.
