- 4 pink grapefruits
- Arugula
- 1/4 cup maple syrup (preferably golden syrup for its delicate flavour)
- 1 tbsp Vanilla pod
- 1/4 cup olive oil
- Roasted pine nuts
Method
- Peel 4 pink grapefruit (collect juice) then segment before placing in salad bowl on a bed of arugula.
- Mix maple syrup, scraped out vanilla contents, the collected grapefruit juice, and olive oil.
- Pour over grapefruit, garnish with grilled pine nuts, serve right away and listen as the compliments abound…
