Maple Ambassador

“I love using maple because it comes from people passionate about what they do. They’re just like me!”

Éric Goeury trained for the restaurant business in Strasbourg, then went to work in it, including the management of wine cellars in England and France. He made his home in Québec some 25 years ago.

With his canny ability to identify trends and interesting new flavours, Éric has risen to become one of Montréal’s best bakers. You can see why at his Viva Panettone, where ingredients are chosen for their special characteristics. The mother yeast he uses, for instance, is 100 years old! And he travels far and wide to learn from other masters of the trade.

Éric Goeury is a perfectionist who does nothing at less than full commitment. He brings his head, heart, and talented hands to his work. In leisure time, you will find him with his son, walking the forest and shooting photos, strumming the guitar, and sharing good food.

Maple and Éric

Maple is an ingredient that Éric regularly incorporates into his pastries, brioches, and croissants. His maple panettone is so delicately sweet that you should consider yourself put on notice that it is an experience that should not be missed.
