Recipe — Carrot Jam with Pure Maple Water

Ingredients

  • 1 1/2 lb grated carrots
  • 4 cups pure maple water
  • 2 cinnamon sticks
  • Zest of an orange
  • 1 tablespoon lemon juice

Method

  1. Combine all ingredients in a large saucepan and bring to a boil over high heat.
  2. Reduce heat and let simmer for 2 hours 30 minutes, stirring several times. Remove from heat.
  3. Remove cinnamon sticks and pour jam into serving jars (or sterilized jars if you want it to keep for longer than 3 to 5 months).

Serve as a condiment to maple turkey confit or another one of your favourite meat dishes.
