- 1 1/2 lb grated carrots
- 4 cups pure maple water
- 2 cinnamon sticks
- Zest of an orange
- 1 tablespoon lemon juice
- Combine all ingredients in a large saucepan and bring to a boil over high heat.
- Reduce heat and let simmer for 2 hours 30 minutes, stirring several times. Remove from heat.
- Remove cinnamon sticks and pour jam into serving jars (or sterilized jars if you want it to keep for longer than 3 to 5 months).
Serve as a condiment to maple turkey confit or another one of your favourite meat dishes.
