Maple Espresso Tonic

Ingredients

  • 1/2 oz maple syrup (preferably golden syrup for its delicate flavour)
  • 1 oz fresh grapefruit juice
  • 1 double espresso (45 ml [1 1/2 oz])
  • 3 1/2 oz tonic water
  • 1 grapefruit zest (to decorate)

Method

  1. Pour the liquid ingredients (except the tonic water) into a 350 ml (12 oz) highball glass.
  2. Fill with ice cubes and stir with a spoon until the glass is freezing to your fingers.
  3. Pour in the tonic water.
  4. Decorate with the grapefruit zest.

Maple syrup comes in four classifications, according to colour and taste.

At the start of sugaring season, syrup is generally clear, with a lightly sweet taste. It becomes darker and caramelized as the season goes on.

An unopened can of maple syrup keeps for many years.

Once the can is opened, syrup should be kept in an airtight container in a cool place.
